A Very Tasty Glace

Here is a nice glace I really like, on its own merits, and as a substitute for soy sauce based glaces. Works great on pork and chicken. Readers know that I am not a fan of soy sauce but a big fan of balsamic vinegar. I always have a carafe of it on the counter top and just last month had to pop for a replacement bottle of Aceto Balsamico Tradizionale–Extra Vecchio, which is pricey but should last a year drizzle by drizzle.
Using the regular balsamic we have:
6T balsamic vinegar
3T honey
2T EVOO
1T Dijon mustard
2T fresh chopped tarragon, basil or most any leafy herb green and fresh
S/P to taste
As a rule, you might substitute balsamic vinegar for soy sauce in any of the countless soy sauce marinades.
