Save for my popcorn popper and double boiler, these two so called universal lids are all I have, the rest, seven or eight, have been tossed as unneeded. It’s fine if a new pot or pan you’re looking at comes with a matching lid, but don’t pay for one. Buy a universal lid instead. Al Clad makes nice aluminum ones. The copper one shown is an ancient purchase from Paris. Lids aren’t used much in commercial kitchens, but the few I worked in had one or two, usually of this universal type.
The reason for writing this, is that I am now using these lids more at my ventless apartment to keep the smoke down, even as I cook at lower temperatures on the electric range. They help, they look nice and since they’re flat, they don’t take up much storage space.
